| The
farmhouse Podere La Casetta owns 96 hectars of land. Its farming
activities feature the respect apllied to the various operations
related to the working of the lands and the quality of its
products.
CROP-GROWING
35 hectars of the farm soil are devoted to fodder-growing,
such as sorghum, clover, lucerne, which once ready will be
sold as "in the green state". That means that the
farm will prepare the soil in order to plant the crops and
make them grow to maturity. The final buyer will follow direct
the harvesting and the further operations required to have
the crops prepared for the market.
The principal steps involved in growing crops are :
PREPARING THE SOIL : it involves different operations
and take place in july and august. The first step is fertilising
: la Casetta mainly uses animal and nitrogenous fertilizers,
the quantity of the latter one being accepted by the biological
Agriculture. The second step is the plowing, the effect of
which is to break up the soil, killing weeds and aerate the
soil; in most cases plowing leaves the soil broken up in lumps
there are too large therefore is normally followed by the
harrowing that will help better the placing of the seed during
the sowing. The sowing itself involves the placing of the
proper quantity of seed at the proper depth and spacing in
the soil, and then covering it with soil. Today, special machines
are available to perform it with precision but even so a lot
of time and experience are essential. Crops grown to maturity
are then sold and the buyer will personally perform the harvesting
and the further operations to have the crops prepared for
the market.

FORESTRY
Since the Roman Age, forestry has been a very important agricultural
activitiy of Maremma. The huge forests of the region have
contributed to make the felling part of the local culture
and tradition. The felling is obviously strictly ruled by
the Forestry Commission. Normally when a tree has been felled,
timber is converted into lumber and lumber products ready
for use in the woodworking industry but in this area the main
production being of wood to be used as firewood and charcoal
The felling season opens every year on the 1st October and
close on the 30th March.
OLIVE OIL MAKING
The farm owns approx. 500 olive trees. It then produces extra-virgin
oil from olive trees that do not receive any chemical treatment.
Therefore the production is limited. The harvesting of the
olives, which is still done manually with net and rakes, takes
place between October and November. After the olives are harvested
they are daily transported to a local presser to be washed,
pressed, squeezed and spinned to have the oil ready for the
market.
